The Assignment : Creating a localised Chicken Concept and making it Franchisable
The Approach : The market in inundated with chicken concepts, but Africans in Tanzania love their bird fried , grilled and well done. First one was to explore Umami, second was to find which way we could work with open fryers or pressure fryers. From flavours, to type of chicken, to breading and sauces we worked the concept from the ground Up.
One concept was open fryer and one in a closed fryer
The Outcome : The marinades, processes and sauces created for the brand are practically inimitable and have been passed on the brand as ‘Their Secret To Their Success. We have made Sliders, Grilled, Fried, Tater tots and so much more
